HISTORY:
First released in 1960 by winemaker Max Schubert; often dubbed “Baby Grange” because some of its barrels are those that held the prior vintage of Grange. Over decades, its blend, oak treatment, and multi-regional fruit sourcing have made it an iconic Penfolds wine in the Cabernet-Shiraz blend category.
BLEND & AGING:
Matured in American oak hogsheads, ~38% new oak; vinification & maturation designed to balance fruit and oak.
AROMA (NOSE):
Aromas of dark fruits like black cherry, plum, blackberry, along with spice (vanilla, cinnamon etc.), cocoa, toasted oak, and dessert-like notes (e.g. dark jelly, port-wine jelly textures). Some roast/coffees and oak toast present.
TASTE (PALATE):
Medium-to-full body; firm structured tannins; acidity supports fruit and oak interplay; powerful but refined; palate combines richness with oak smoothness.
FINISH:
Long finish; lingering fruit with oak and spice; hints of toast/vanilla oak in the tail; overall finish with strength and long persistence.
FLAVOR:
Rich fruit-driven profile; sweet and spicy middle-palate; dark jam/blackcurrant/plum fruit mingles with oak, toast, vanilla, cocoa; savory hints (roasted meat, smoke, or cured/savoury components).
FOOD PAIRING:
Pairs well with red meats (steak, roasted lamb), game, richly spiced or grilled dishes; dishes with strong sauces; aged hard cheeses are good.

调配与陈酿:
使用美国橡木 hogsheads 桶陈酿,其中约 38% 为新桶(new oak);发酵与陈年方式以保持果味与橡木风味的平衡。
