HISTORY:
Castillo Ducay is part of Bodegas San Valero’s refreshed “Wine of the stones” collection; the 2022 vintage of Castillo Ducay Tinto (along with Blanco and Rosado) emphasizes the distinctive stony soils of the Monte Ducay site in Cariñena.

BLEND & AGING :
Fermentation takes place in temperature-controlled stainless steel tanks; this is a young wine with no significant oak ageing; emphasis is on preserving fruit freshness and mineral notes; fermentation temperature around 26-28°C, with maceration for a number of days.

AROMA (NOSE):
Clear red fruit aromas, with floral undertones; elegant and clean bouquet

TASTE (PALATE):
Bright entry, lively but not harsh acidity; body leaning from light to medium; tannins soft and approachable; palate broad and suited for everyday drinking

FINISH:
Elegant, clean finish with lingering fruit; balanced tannin and acidity; not extremely long but satisfying

FLAVOR:
Fruit-driven, ripe red fruits (cherry, berry), with mineral/stone soil characteristics; overall fresh, easy to drink, with gentle tannins

FOOD PAIRING:
Red meats, poultry, stews, everyday dishes; also works with lightly spiced or earthy flavours; best with relatively moderate flavours
