Description

HISTORY:
The Benito Escudero estate is in Grávalos, La Rioja; the family has produced Cava since the 1950s; vineyards located foothills of Monte Yerga provide altitude and conditions favorable for wines with good acidity and balanced flavor.

BLEND & AGING:
Grapes from the estate, hand-selected Viura; gentle pressing to obtain free-run must; first fermentation at low temperature (~14°C) in stainless steel tanks; bottled in spring for secondary bottle fermentation to produce bubbles; aged sur lie for at least 36 months.

AROMA (NOSE):
Aromas of apples; fresh, crisp notes like yellow apple or citrus; elegant and delicate nose.

TASTE (PALATE):
Bright and crisp acidity; lighter body; well-integrated bubbles; smooth entry with a lively palate.

FINISH
Clean and refreshing finish; fruit and acidity linger; delicate bubbles still perceptible in the aftertaste.

FLAVOR:
Fruit-driven, apple aromas are prominent; fresh acidity; delicate bubbles; elegant and well balanced taste profile.

FOOD PAIRING:
Hot or cold starters; fish and seafood; foie gras; fresh or aged cheeses; works well with dishes that aren’t overly heavily seasoned.
